The Chefs

Roberto Alcocer

Born in Mexico City and raised in Ensenada, Roberto Alcocer trained in Bordeaux and at La Broche in Madrid, holder of two Michelin stars. In 2021 he opened Valle in Oceanside, California, pairing Californian ingredients with a Mexican sensibility. In 2023 he earned his first Michelin star, becoming the first Baja California native to receive the honor.

Esteban Lluis

Originally from Mexicali, Esteban Lluis graduated from the Culinary Institute of America and honed his craft in San Diego, Los Angeles, and San Francisco at Corazón de Tierra and Cala. In 2021 he founded Damiana in Valle de Guadalupe, a celebration of local, seasonal ingredients and respect for the land. Damiana earned a Michelin Star in 2024 and again in 2025.

Christian Schwuger

Born in Buenos Aires, Christian Schwuger, our Fairmont Culinary Expert, built his craft around fire, proteins, and the art of the grill. He refined his technique across Paraguay, Brazil, Uruguay, and Chile, then in France and Spain, before settling in Mexico. He has created and taken part in grill festivals in Baja California Sur, Chile, and the United States, and champions good, clean, and fair food in the spirit of the Slow Food movement.
