
Avocado Toast
Avocado is a fruit with many health benefits in addition to being one of the favorites of the moment. It is a source of energy and nutrients. it contains vitamins K, C, B5, B6 and E, potassium, and folic acid. It is good for the heart, rich in fiber, low in cholesterol, yummy, and easy to incorporate into your diet.
Jorge Miramontes, Chef at Brisas Coastal Grill & Bar, shares this delicious recipe that is easy to prepare and perfect either to start the day or for lunch.
Ingredients:
- 2 eggs
- 1 slice of bread
- Pumpkin pip
- Lettuce
- 4 cherry tomatoes
- Salt
- Pepper
- Olive oil
Ingredients for guacamole:
- 1 avocado
- 1/2 white onion
- 1/2 tomato
- 1 serrano pepper
- Coriander
- 1 lemon
- Cotija cheese
- Salt
- Pepper
Preparation:
Put a frying pan on the fire and add oil, once hot, fry the eggs, and season with salt. Toast the bread.
For the guacamole; peel the avocado and mash it. Chop the onion, tomato, serrano pepper, and coriander leaves into small cubes. Put all the ingredients together, stir and season with salt, pepper, and lemon.
For the salad; chop the lettuce leaves to taste. Cut the cherry tomatoes into quarters. Mix the ingredients and season with olive oil, salt, pepper, and lemon.
Putting together:
Take the bread already toasted and spread with the guacamole. Add cotija cheese to the guacamole and pumpkin seeds. Set the salad aside and the eggs to taste.
