Guacamole is an avocado-based delicacy, a Mexican fruit with several vitamins that help keep our nervous system in good condition. So it is usually recommended in diets and is generally eaten very often.

Today we will share a special recipe with a secret ingredient so you can live the best Mexican experience at home by preparing an incredible and authentic Fairmont Mayakoba Guacamole.
It is not news that insects are included in dishes in Mexican gastronomy. One of them are chapulines: exquisite, crunchy.
With a herbal and citric flavor that reminds us of the countryside, although each person has a different perception, everyone agrees that it is a distinctive flavor of Mexico.
It is a pre-Hispanic delicacy among the Zapotecs and Mayans with more than 2500 years of tradition, and they were fundamental in the diet of our ancestors.
The consumption of grasshoppers has among its benefits:
-High protein content, its contribution is higher than that of meat.
-It helps the nervous system by providing vitamin B12.
-They are easy to digest.
For this occasion, we decided to use “Chapulines enchilada salt” in our guacamole to provide a unique experience that connects with ancient cultures in gastronomy and allows us to perceive the perfect balance of spiciness.
What do you need?
- 2 Avocados
- Half a piece of white onion
- 2 Lemons
- Chapulines enchilada salt
- Toasted chapulines
- 2 pieces of chistorra sausage previously sliced
- Grated Oaxaca Cheese to taste
Steps to make the perfect guacamole
- Mash the avocados in a bowl
- Finely chop the onion and cilantro and add them to the bowl
- Squeeze the juice from the lemons into the mixture
- Add a small amount of chapulines enchilada salt and mix
- Adjust seasoning to your liking. NOTE: You can add more salt or lemon juice depending on your taste
- Finally, add the toppings: Toasted Chapulines, Chistorra, and Oaxaca Cheese
