Recipes to celebrate avocado day!

The Avocado: A traditional Mexican fruit with more than 10,000 years of history and with great appreciation in the world.
So why not celebrate the existence of this delicacy?

Model Meals, a company that promotes sustainable agriculture and healthy foods, created an unofficial holiday which celebrates National Avocado Day on July 31st.

The company’s founders wanted to dedicate a day to the avocado because it is an essential superfood in life and a great source of nutrients, bringing numerous health benefits.

Over the course of the years, the avocado has become one of the favorite fruits of people all over the world and what a better way to celebrate avocado day than by eating and enjoying its unique and creamy taste?

So here are three delicious avocado recipes for you!


Avocado toast:

You will need:

  • 4 Small, ripe avocados
  • 2 Eggs
  • 1 Lime or 1 lemon (to your liking)
  • Mint leaves
  • Smoked paprika
  • 2 Slices of bread
  • Olive oil
  • Salt
  • Pepper

Steps to follow:

  1. Cook the eggs in boiling water for 6 minutes. Then remove from heat and immediately place under cold water .
  2. Peel and remove the avocados’ pits. Then mash with a fork.
  3. Add lime or lemon juice, a few finely chopped mint leaves, salt, and pepper to the mashed avocado.
  4. Heat a little olive oil in a frying pan. Fry the bread slices until golden brown.
  5. Then, place the slices of bread on a plate, spread the mashed avocado on the bread, peel the eggs and place them on the toast.
  6. Don’t forget to break the egg open so that the yolk runs into the mixture, and sprinkle with a little smoked paprika. Enjoy!


Shrimp and grapefruit avocado salad:

You will need:

  • 2 avocados
  • 350 grams of shrimp
  • 1 grapefruit
  • 2 lemons
  • 3 tablespoons of olive oil
  • Chives
  • Tabasco
  • Salt

Steps to follow:

  1. Peel the shrimp and mix them in a bowl with lemon juice (only one lemon), olive oil and 3 or 4 drops of tabasco. Let marinate while you prepare the rest of the salad.
  2. Peel the grapefruit and cut into wedges (add as much as desired).
  3. Peel the avocado and remove the pit. Cut the avocado into thin slices and squeeze the juice from the second lemon over the avocado.
  4. Add the grapefruit segments and avocado slices to the previously marinated shrimp.
  5. For the final touch, sprinkle the chopped chives and add some salt. You are ready to enjoy!

Baked avocado with egg and salmon:

You will need:

  • 2 unripe avocados
  • 2 slices of smoked salmon
  • 2 eggs
  • 1 small twig of flat-leaf parsley
  • Chives
  • Salt
  • Pepper

Steps to follow:

  1. Wash the avocados and cut them in half to remove the pit.
  2. Place the avocado halves on a baking tray or in a casserole dish.
  3. Inside each avocado, add a slice of salmon, an egg and a pinch of salt and pepper.
  4. Place in the oven and bake at 180 C (350F) for 12 to 15 minutes.
  5. Chop the chives into thin slices.
  6. Remove leaves from parsley and chop finely.
  7. Remove the avocados from the oven when the time is up and finally decorate with the chives and chopped parsley.
